These muffins are my favorite morning treats recently. Soooo delicious and easy to make, plus perfect for my little one as there’s no refined sugar! Oh and the clean up is super quick as the batter is whipped up all in one go in the Vitamix! Huzzah! 💥 Yummy in your tummy tum tum! These muffins are light and fluffy and decadent all at the same time. Many thanks to my neighbor (and Maeve's babysitter/BFF) Helen for sharing her recipe! It's a keeper.
1 cup cashew nut butter or 1-1/2 cups raw cashews
2 bananas, ripe
5 pitted Medjool dates
1/2 tsp baking soda
1 tsp apple cider vinegar
1. First start with about a cup and a half of raw cashews in your blender. Blend while adding a little flavorless oil (I used safflower but use cashew oil if you’ve got it, if that's even a thing?!) or just use 1 cup cashew nut butter.
2. Add two bananas and five pitted medjool dates. Blend until super smooooth!
3. Add two eggs, blend again; 1/2 tsp of baking soda and 1 tsp of apple cider vinegar, blend again.
4. Divide batter into 12 lined muffin tins and bake for 12 minutes at 400°F. TA DAH. You're done and yum.
Makes 12 muffins.
